Black pudding

Ingredients

  • 4 liter pork blood
  • 3.5 kilogram shpik
  • 3.5 kilogram pork skin
  • 20 grams salt with nitrite
  • 2 grams black pepper
  • 1 grams ground cumin
  • 2 grams marjoram
  • 1.5 grams allspice
  • 20 grams onion puree
  • milk

Preparation method (receipt)

Heat the pork blood to 40 degrees Celsius. Mince the skin. Dice the shpik and fry. Mix all ingredients, fill the bottle or the gut with the mixture, boil at 80 degrees Celsius for 2 hours.
