Charlotte, Russian charlotte

Russian charlotte (or Charlotte russe) is the most popular and favorite dessert of apples in Russia, which are baked in dough. The recipe was invented in London in the early XIX century by the French chef Marie-Antoine Carême who was employed by Emperor Alexander I. Later, the recipe perfectly struck roots at the imperial court and spread throughout the country. Originally the dish was called charlotte à la parisienne (Parisian charlotte), and later it became famous throughout the world under the name of charlotte russe (Russian charlotte). The classic Russian charlotte is made in the following way: savoiardi cookies or a ready-made biscuit is put in a baking dish and topped with Bavarian cream and whipped cream. Various simplified recipes appeared later. Most mistresses use Antonovka apples to bake charlotte. They are sliced, poured over with simple biscuit dough and baked in the oven for half an hour.

Ingredients

  • Eggs - 3 pcs.
  • butter - 200 g
  • sugar - 1/2 cup
  • baking powder - 1 tbsp.
  • sour cream - 8 tbsp.
  • vanillin - 1 g
  • apples - 4 pcs.
  • flour - 3 cups
  • salt – a pinch
  • starch - 1 tbsp.
  • vanilla sugar - 1 bag

Preparation method (receipt)

Slice apples and mix with 3 tbsp. sugar. Poach under a low heat (do not boil). Allow to cool. Beat 1 egg with 1/2 cup sugar, salt and vanillin. Add 2 tbsp. sour cream and butter (soft). Pour in the sifted flour and baking powder, and knead dough. Make the pouring. Mix 2 eggs, 2 tbsp. sugar, vanilla sugar, 6 tbsp. sour cream and starch in a cup. Divide the cooled dough into two unequal parts. Distribute the most part of dough along the baking dish by hands and form the sides. Fill with the pouring and lay the apple filling atop. Roll out the smaller part of dough into a thin layer. Make heart-shaped figurines with a plunger cutter and put them on top of the pouring with apples. Bake in a hot oven at 180 °C for 40 minutes until golden brown. After it has cooled, sprinkle with powdered sugar.
