Quick pickled cucumbers (half sour pickles)

Quick pickled cucumbers (or half sour pickles) is a traditional dish of Russian, Belarusian, Polish and Ukrainian cuisines. It is made of cucumbers through short-term pickling. Due to this, cucumbers acquire a moderate salinity, and their core retains the crisp texture and firmness of fresh cucumbers. The dish in different versions was most probably known in Russia a thousand years ago. Cucumbers become pickled during two days or even within several hours if cut off the tips. Quick pickled cucumbers are considered a good snack for vodka.

Ingredients

  • Small cucumbers - 1 kg
  • garlic - 3 cloves
  • dill - 1 bundle
  • salt - 1 tbsp
  • sugar - 1/2 tsp.
  • peppercorns - 5 corns

Preparation method (receipt)

Soak cucumbers in cold water for 30 minutes. Cut the tips. Put cucumbers in a plastic bag. Cut dill, peel and finely chop the garlic, and add to cucumbers. Crush the peppercorns and add to the package together with salt and sugar. Tie the bag and shake it well for about 3 minutes. Leave at room temperature for 1 hour. Shake the package from time to time: cucumbers are evenly salted in this way. Then refrigerate the package for 3 hours.
