Turkey-asparagus roll-ups

Ingredients

  • 1 stalk of green onions
  • 1 large thin turkey schnitzel
  • 1 tablespoon grainy mustard
  • sea salt and pepper
  • 1 chicken ham slice
  • 0.5 slice of hard cheese (eg. Emmental)
  • 2 pieces of dried apricots
  • 1 PC. of prunes
  • 0.25 cup dry white wine
  • 25 grams butter
  • vegetable oil for frying
  • 125 grams white asparagus
  • 70 grams green asparagus
  • 0,25 teaspoons sugar powder
  • 0,25 teaspoons grains of pink pepper (or green)
  • green chervil
  • vegetable broth

Preparation method (receipt)

Cut green onion into halves and fry in the vegetable oil on low heat for 5 minutes. Place turkey schnitzel between sheets of cling film and gently beat. Grease the schnitzel with mustard, sprinkle with salt and pepper, top schnitzel with ham, cheese, fried green onion and dried fruits. Roll up, stab with a toothpick or a wooden skewer,you can tie with cooking string. Season with salt, pepper. Fry roll in the vegetable butter for 10 minutes on each side. Remove, wrap in the foil. Pour dry white wine in the pan, bring to a boil, add butter, salt and pepper. Peel white asparagus, cut off the hard tip from green asparagus. Cut asparagus into slices about 2 centimeterslong. Fry in the vegetable oil for about 5 minutes, add some vegetable broth and simmer for about 10 minutes on low heat. Season asparagus with salt, pepper and add some butter. Grind pink pepper in a mortar .Cut turkey roll on the bias into slices, place on asparagus and sprinkle with pink pepper and chopped lovage, serve immediately.
