Pear chutney with raisins


  • 1.5 kilogram pears in syrup
  • 500 grams onion, diced
  • 100g brown sugar
  • 200 grams sugar
  • 2 fresh chile pepper
  • 4 cloves of garlic
  • 1 tablespoon green peppercorns (or a mix of peppers)
  • 10 fragrant pepper peas, freshly ground
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • zest of one lemon
  • 1 pinch of lemongrass

Preparation method (receipt)

Place all ingredients in a saucepan, cook over low heat until the raisins are not swells. If you wish to make a smoothie blender. Pour into sterilized jars and roll.
