Königsberg tripe soup


  • 1 kilogram tripe
  • 3 liter water
  • salt
  • 1 bunch of roots
  • 1 bunch of greens
  • 40 grams margarine 50 grams flour
  • 1 tablespoon vinegar
  • 100 grams sugar
  • 150 grams pickled cucumbers
  • pepper
  • 1 kilogram potatoes
  • 500 grams carrots

Preparation method (receipt)

Boil the tripe with roots and herbs in the salted water until soft. Strain the broth, chop the tripe, place into the pot, add diced potatoes and carrots, boil until done. Season with vinegar, sugar, salt and pepper. Melt the margarine, sauté the flour, add in the soup. Add the diced cucumbers, bring to a boil, serve.
