Khrenovina, khrenodyor, gorlodyor (horseradish and tomato sauce)

Khrenovina, khrenodyor, gorlodyor (transliterated from Russian) are alternative names of a horseradish hot sauce, common in Siberia and the Urals. It is prepared from minced tomatoes, horseradish, garlic and salt. Ground black and red pepper, sweet pepper, vinegar, sugar and carrots may also be added. As a rule, khrenodyor (khrenovina) is a much more hot and hearty sauce than creamy horseradish.

Ingredients

  • Ripe tomatoes – 1 kg
  • fresh horseradish root – 100 g
  • garlic – 100 g
  • salt – 1 tbsp.
  • paprika - 1 tsp. (optionally)

Preparation method (receipt)

Prepare the ingredients. Wash tomatoes, dry with a towel, remove stems; peel the horseradish roots and garlic. Cut all the ingredients into small pieces (this is especially important for horseradish, since its roots are rather rigid and fibrous), grind all the vegetables and salt in a blender in stages and mix in a deep bowl. The color of the finished sauce will be more saturated if add sweet ground paprika. To store the ready sauce for the winter, pour it into clean jars (they must first be washed, splashed with boiled-hot water and dried), plug and refrigerate.
