Hunting sauce


  • 80 grams butter
  • 3 shallots
  • 400 grams champignons
  • 2 tablespoons tomato paste or ketchup
  • 2 tablespoons flour
  • 250 milliliters dry white wine
  • 200 milliliters cream
  • 1 tablespoon soy sauce
  • 2 tablespoons parsley
  • 2 teaspoons beef broth(concentrated)
  • salt
  • pepper

Preparation method (receipt)

Chop shallot onion, saute in butter. Add the sliced mushrooms and tomato paste, simmer for 10 minutes, sprinkle with flour, to redden. Add the wine, pour the cream, add the broth, cook about 30 minutes over low heat. Season with salt and pepper and pour the soy sauce.
