Crispy pork shin


  • 750 grams pork shin
  • 1 onion, peeled and cut in halves
  • 2 cloves of garlic, peeled and cut in halves
  • 1 clove sticks
  • 2 bay leaves
  • 0.5 teaspoons juniper berries
  • 0,25 teaspoons cumin
  • 1 teaspoon salt
  • ground black pepper
  • 2 liter water

Preparation method (receipt)

Boil water in the saucepan, add onion, garlic, salt and pepper. Bring to a boil and pour the received brine over pork shin ( you should cover all rhe shin). Remove meat from the brine and bake in the oven for an hour at 180 - 200 degrees Celsius.
