Chrain (horseradish) (creamy chrain)

Creamy chrain is a popular sauce in Russia made of horseradish and cream (or sour cream), one of the most common sauces with horseradish. This sauce is most commonly called in the same way as the plant itself - "khren" (meaning horseradish). Small jars with this sauce are sold in any store (it was one of the few known ready-made sauces in Russia in the Soviet period). It is made at home less often, although the sauce recipe is incredibly simple.

Ingredients

  • Heavy cream (or light sour cream) - 150 ml
  • rasped horseradish - 1-2 tbsp. (or more - to taste)
  • sand sugar – a pinch
  • salt – to taste
  • black ground pepper – to taste
  • grated beet - 1 tbsp.

Preparation method (receipt)

Whip cream thoroughly in a clean medium-sized bowl. Then add the grated horseradish. Season with salt, black pepper and sugar to taste. You can add a tablespoon of pre-boiled and very finely grated beets. Serve the sauce cold with hot or cold meat, aspic (kholodets) and smoked fish.
