Chicken and pineapple salad

The chicken and pineapple salad is a festive dish of the late Soviet and post-Soviet period. It is interesting that pineapples in the USSR went on sale mostly sliced and sealed in plastic bags. The chicken and pineapple salad was apparently invented as a way to use chopped fruits. However, it has struck roots and is prepared to this day.

Ingredients

  • Pineapple - 1 piece
  • boiled chicken - 400 g
  • walnut - 1/2 cup
  • coriander - 1 bundle
  • green onion - 5 sprigs
  • mayonnaise - 4 tbsp.
  • curry - 1/2 tsp.
  • ground hot pepper – to taste
  • salt – to taste

Preparation method (receipt)

Remove the pineapple "crown" with leaves and cut longitudinally in half. Cut pulp out with a sharp knife and dice. Cut chicken into cubes. Chop the green onions and coriander leaves. Fry walnuts in a dry frying pan for 3 minutes and finely chop. Mix chicken, pineapple, greens and nuts in a bowl. Season with mayonnaise and curry, and salt. Put the salad into the pineapple half and sprinkle with hot pepper. Fasten the "crown" with toothpicks.
