Chick-pea salad with red onion and feta


  • 400 grams cooked chick-pea
  • 200 grams red onions, cut into strips
  • 3 cloves of garlic, chopped
  • 1 red chilli pepper, chopped
  • 7 tablespoons olive oil
  • 7 tablespoons soft vinegar
  • 1 teaspoon sugar
  • salt
  • black pepper
  • 125 grams cherry tomatoes, sliced into 4 pieces
  • 1 carrot, cut into strips
  • 1 stalk celery, thinly sliced
  • 3 green onion pens, chopped
  • 3 tablespoons parsley, chopped
  • 1 tablespoon mint, chopped
  • 125 grams feta cheese, cut into cubes
  • 2 tablespoons orange peel , sliced into strips

Preparation method (receipt)

Heat the oil in a frying pan, pass onion, garlic and chilli, add the sugar and lightly caramelize. Pour the vinegar, salt, pepper and cook for 3-4 minutes. Add chickpeas to the pan and gently warm. In a bowl, mix the contents of the pan, cherry tomatoes, carrots, celery and green onions, add herbs and feta cheese, salt and pepper. Put on a plate, sprinkle with orange zest. Serve warm or present.
