Heat the oil in a frying pan, pass onion, garlic and chilli, add the sugar and lightly caramelize. Pour the vinegar, salt, pepper and cook for 3-4 minutes. Add chickpeas to the pan and gently warm. In a bowl, mix the contents of the pan, cherry tomatoes, carrots, celery and green onions, add herbs and feta cheese, salt and pepper. Put on a plate, sprinkle with orange zest. Serve warm or present.
