Carrot-orange salad with ginger vinaigrette and smoked duck breast


  • 6 young carrots
  • 3 oranges
  • 0,5 red onion
  • 60 grams fresh ginger
  • 6 tablespoons olive oil
  • 3 limes
  • 2 tablespoons maple syrup
  • sea salt
  • ground black pepper
  • 300 grams smoked duck breasts
  • 2 mint sprigs

Preparation method (receipt)

Peel carrots and slice into thin circles. Peel oranges and cut out the pulp. Peel the onion, slice into thine semicircles. Peel the ginger and finely grate, mix with olive oil, lime juice, maple syrup, salt and pepper. Dress salad with received sauce and set aside for 15 minutes. Chop thinly the mint. Slice the duck breast and place into a salad.
