Bavarian style giblets


  • 0,5 pork lung
  • 0,5 pork heart
  • 0,5 pork tongue
  • 1 pork kidney
  • salt
  • 1 bay leaf
  • 1 onion, peeled
  • 80 grams butter or melted butter
  • 150 grams flour
  • ground pepper
  • peppercorns
  • vinegar
  • 2 liter water

Preparation method (receipt)

Clean the giblets, wash, place into a pot, add onion, peppercorns, bay leaf and pour 2 liters of water. Cook for 2 hours on low heat. Remove the giblets from the pot, slice, drain the broth. Melt the butter, add the flour, stirring and pour the broth. Pour giblets with a sauce, season with ground pepper and vinegar.
