Wash the goose leg, dry. Pull the excess skin over the goose meat and fix with cooking string and toothpicks. Pin repeatedly. Put seam down in the oiled baking form. Bake at 175 degrees Celsius for 30 minutes, then flip, add some water and bake for another hour. At the end grease with salted water and bake until crispy crust. Remove cooking string and toothpicks before serving.
