Baked goat cheese with garlic and honey-rosemary syrup


  • 4 young garlics
  • 50 grams pine nuts
  • 4 rosemary sprigs
  • 150 grams honey
  • 400 milliliters white grape juice
  • 1 pinch of salt
  • 20 grams Amaretti biscuits
  • 8 small goat cheeses
  • 4 tablespoons olive oil
  • black pepper

Peel the garlic and divide into cloves.Fry pine nuts until golden brown in a dry pan without oil. Melt the honey and simmer the garlic for 2-3 minutes. Add grape juice and salt a bit. Add the rosemary and stew for 15-30 minutes. Strain the syrup and season to taste. Crumble Amaretti. Place goat cheese on the baking tray, covered with baking paper, drizzle with olive oil, sprinkle with pepper and Amaretti, bake in the oven at 200 degrees Celsius for 5-8 minutes. Sprinkle with nuts and breadcrumbs, pour the sauce and serve.
