Baden style asparagus with Westphalian ham and egg pancakes


  • 1 kilogram asparagus
  • salt
  • 6 slices of Westphalian ham
  • 2 eggs
  • 80 grams flour
  • 50 milliliters milk, 75 milliliters sparkling water
  • pinch of sugar
  • butter

Preparation method (receipt)

Rub the egg yolks with sugar and salt. Add flour, milk, mineral water. Give the dough for 20 minutes. Beat the whites until peaks stable. Clean asparagus and blanch in salted water. Proteins enter into the dough. Bake golden pancakes and break them. Serve pancakes with asparagus and ham, watering with melted butter.
