Avocado-mango salad


  • 50 grams pine nuts, roasted in a dry pan without oil
  • 200 grams mozzarella, diced
  • 1 ripe mango, peeled and sliced
  • 50 grams arugula
  • 100 milliliters fresh orange juice
  • salt
  • pepper
  • 0,5 red chile pepper, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon acacia honey
  • 1 ripe avocado, peeled and diced
  • 0,5 lime

Preparation method (receipt)

Boil for half. Stir in salt, pepper, chilli, olive oil and honey until the vinaigrette. Diced avocado sprinkled with lime juice, salt and pepper. In a serving ring put avocado, mozzarella and mango layers. Seal with a spoon, drizzle with dressing, remove the ring. Mix arugula with the remaining vinaigrette and garnish with lettuce. Sprinkle with nuts and serve.
